I ruined pork and beef burgers?
I bought the grinder attachment for my KitchenAid stand mixer and I decided to ground up some pork and beef for burgers. I put it through the fine grinder instead of the thicker one. I put the meat through it twice. Once I cooked the burgers, once they were finished, they came out looking a little sad and overcast. They were heavy, and when you bit into them they were quite hard, kind of like eating a freaking Johnsonville sausage that has been boiled. It was just an epic failure. Could someone tell me if it had anything to do with grinding it twice and fine? Or their thickness? Or the pork and beef? I don't know!
Answer:
I know sausage meat is ground on a different setting than ground round, so I'm pretty sure it could make a difference in how it cooks up.
